Preheat your oven to 350°F (175°C) and grease a muffin tin with ghee to prevent the quindims from sticking.
In a small saucepan over low heat, combine the unsweetened coconut milk and unsweetened shredded coconut. Cook for about 5 minutes, stirring occasionally until the coconut absorbs most of the milk. Set aside to cool slightly.
In a large mixing bowl, whisk together the egg yolks, vanilla extract, and salt until creamy and well-combined.
Add the coconut mixture to the egg mixture, and stir until fully incorporated.
Pour the custard mixture into the prepared muffin tin, filling each cup about three-quarters full.
