  • 3 pounds Pork shoulder (also known as pork butt)
  • 1 tablespoon Sea salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cumin
  • 0.5 teaspoon Cayenne pepper
  • 0.5 cup Apple cider vinegar
  • 1 cup Chicken broth (Whole30 compliant)
  • 2 tablespoons Coconut aminos
  • 12 large pieces Bibb or butter lettuce leaves
  • 2 cups Green cabbage, shredded
  • 1 medium Carrot, shredded
  • 0.5 cup Whole30-compliant mayonnaise
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Fresh dill, chopped

Directions

Step 1

1. In a small bowl, combine sea salt, black pepper, garlic powder, onion powder, smoked paprika, cumin, and cayenne pepper.

2. Rub the spice mixture all over the pork shoulder evenly.
