Ingredients

  • 1 pound pork tenderloin
  • 1 large onion
  • 2 medium red bell pepper
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons olive oil
  • 4 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 whole lemon
  • 2 tablespoons fresh parsley
  • 8 pieces wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning on the grill.

Step 2

Cut the pork tenderloin into 1-inch cubes and place in a large mixing bowl.

Step 3

Thinly slice the onion and cut the red bell peppers into 1-inch pieces. Add them to the bowl with the pork.

Step 4

In a small bowl, combine apple cider vinegar, olive oil, minced garlic, salt, black pepper, paprika, cumin, and oregano.

Step 5

Juice the lemon and add both the juice and zest, along with chopped fresh parsley, to the marinade bowl. Mix well.

Step 6

Pour the marinade over the pork and vegetables. Toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for more flavor.

Step 7

Preheat your grill to medium-high heat.

Step 8

Thread the pork and vegetables onto the skewers, alternating between pork, onion, and bell pepper pieces.

Step 9

Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the pork is cooked through and reaches an internal temperature of 145°F (63°C).

Step 10

Remove skewers from the grill and let them rest for a few minutes before serving.

Step 11

Garnish with additional fresh parsley if desired and serve warm.
