Ingredients

  • 1.5 pounds pork ribs
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic cloves, minced
  • 3 medium carrots, peeled and sliced
  • 2 stalks celery stalks, sliced
  • 1 large sweet potato, peeled and diced
  • 1 medium zucchini, sliced
  • 8 cups chicken broth, low-sodium and Whole30 compliant
  • 2 leaves bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat.

Step 2

Add the pork ribs and sear on all sides until browned, about 8 minutes. Remove the ribs and set aside.

Step 3

In the same pot, add the remaining tablespoon of olive oil. Sauté the chopped onion for 3-4 minutes until translucent.

Stir in the minced garlic and cook for another minute until fragrant.

Add the sliced carrots, celery, sweet potato, and zucchini to the pot. Sauté for 5 minutes, stirring occasionally.
