Ingredients

  • 2 cups Pistachios, shelled and unsalted
  • 1 cup Almond flour
  • 0.25 cup Coconut oil
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Sea salt
  • 6 Medjool dates, pitted

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Place the pistachios in a food processor and pulse until they are finely ground but not turned into a paste.

Step 3

Add almond flour, baking soda, and sea salt to the ground pistachios and pulse a few more times to combine.

In a small saucepan, melt the coconut oil over low heat until liquid but not hot.

Add the eggs, melted coconut oil, vanilla extract, and pitted dates to the food processor.
