Ingredients

  • 2 pounds beef marrow bones
  • 1 pound chicken thighs, skinless
  • 1 large onion, halved
  • 4 inches ginger, sliced
  • 5 whole star anise
  • 2 whole cinnamon sticks
  • 6 whole whole cloves
  • 3 tablespoons fish sauce (compliant)
  • 2 teaspoons sea salt
  • 1 teaspoon whole peppercorns
  • 4 cups zucchini noodles (zoodles)
  • 1 cup bean sprouts
  • 1 cup fresh basil leaves
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh mint leaves
  • 2 whole lime, cut into wedges
  • 1 whole sliced jalapeño
  • 2 stalks green onions, sliced
  • 16 cups water

Directions

Step 1

Preheat your oven to 425°F (220°C). Place beef marrow bones on a baking sheet and roast for 30 minutes until brown.

Step 2

In a large pot, add roasted marrow bones, chicken thighs, onion, ginger, star anise, cinnamon sticks, cloves, peppercorns, and water. Bring to a boil.

Reduce heat to low and let simmer uncovered for 3 hours, skimming off foam and impurities regularly.

After 3 hours, remove the chicken thighs from the broth. Allow to cool, then shred the meat and set aside.
