Ingredients

  • 4 Lamb trotters
  • 2 tablespoons Ghee
  • 1 large, finely chopped Onion
  • 4 cloves, minced Garlic
  • 1 inch piece, grated Ginger
  • 1 teaspoon Whole black peppercorns
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Turmeric powder
  • 1 inch Cinnamon stick
  • 1 Bay leaf
  • 8 cups Water
  • 1 teaspoon Salt
  • 2 tablespoons, chopped for garnish Fresh cilantro
  • 1 cut into wedges Lemon

Directions

Step 1

Clean the lamb trotters thoroughly under running water. Pat them dry with a paper towel and set aside.

Step 2

In a large heavy-bottomed pot, heat ghee over medium heat. Add chopped onions and sauté until they turn golden brown.

Step 3

Add minced garlic and grated ginger to the pot. Stir for about 1-2 minutes until they release their aroma.

Step 4

Add whole black peppercorns, cumin seeds, and coriander seeds to the pot. Stir for another minute to let the spices toast and become fragrant.

Step 5

Add the cleaned lamb trotters to the pot. Sauté for 5-7 minutes until the trotters are slightly browned.

Step 6

Stir in the turmeric powder, cinnamon stick, and bay leaf. Combine everything well.

Step 7

Pour the 8 cups of water into the pot and add salt. Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer gently for 2.5 to 3 hours. The slow simmering is essential to extract the flavors from the lamb trotters and spices.

Step 8

Occasionally skim off any foam or impurities that rise to the surface.

Step 9

After cooking, check the seasoning of the soup. Add more salt if needed.

Step 10

Remove the trotter bones from the soup and set aside. Once slightly cooled, strip any meat off the bones and return the meat to the soup, discarding the bones.

Step 11

Ladle the nourishing soup into bowls, garnish with fresh cilantro, and serve hot with lemon wedges on the side.

Step 12

Enjoy your warm and hearty Whole30 Paya Soup!
