Ingredients

  • 6 pieces Fresh passion fruit
  • 0.5 cup Fresh orange juice
  • 0.25 cup Red onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Coconut aminos
  • 3 tablespoons Extra virgin olive oil
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Cut the passion fruits in half and use a spoon to scoop out the pulp and seeds into a bowl. Discard the shells.

Step 2

In a medium saucepan, heat 1 tablespoon of extra virgin olive oil over medium heat. Add the chopped red onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Step 3

Add the passion fruit pulp, fresh orange juice, and coconut aminos to the saucepan. Stir well to combine.

Step 4

Simmer the mixture on low heat for about 5 minutes, allowing the flavors to meld and the mixture to slightly thicken.

Step 5

Remove the saucepan from the heat and stir in the remaining 2 tablespoons of extra virgin olive oil, sea salt, and black pepper.

Step 6

Let the sauce cool slightly, then stir in the chopped cilantro.

Step 7

Taste for seasoning and adjust as necessary.

Step 8

Transfer the sauce to a serving bowl or jar. It can be served warm or at room temperature over your favorite Whole30 compliant dishes.
