Ingredients

  • 1 cup chana dal
  • 0.5 cup red onion
  • 1 teaspoon ginger
  • 2 units green chili
  • 10 leaves curry leaves
  • 0.25 cup coriander leaves
  • 0.5 teaspoon fennel seeds
  • 0.5 teaspoon whole black peppercorns
  • 1 teaspoon salt
  • 1 cup coconut oil

Directions

Step 1

Rinse the chana dal thoroughly under cold water, then soak it in enough water to cover it for 1 hour.

Step 2

Drain the soaked chana dal and set aside about 2 tablespoons of it. This will be added for texture later.

Step 3

In a food processor, place the remaining chana dal, ginger, chopped green chilies, and fennel seeds. Pulse to a coarse paste using minimal water.

Step 4

Transfer the paste to a mixing bowl. Add the reserved whole chana dal, chopped red onion, chopped curry leaves, chopped coriander leaves, whole black peppercorns, and salt.

Step 5

Mix all ingredients thoroughly until well combined.

Heat the coconut oil in a deep frying pan over medium heat.

Step 7

While the oil is heating, take small portions of the mixture and shape them into small discs, about 2 inches in diameter and 0.5 inches thick.

To test if the oil is ready, drop a small portion of the mixture into the oil. It should sizzle and rise to the top slowly.

Once the oil is ready, gently slide 3-4 vadas into the oil without overcrowding the pan.

Fry the vadas on medium heat until they turn golden brown and crispy, approximately 3-4 minutes per side.

Remove the vadas using a slotted spoon and drain them on paper towels to remove excess oil.

Continue frying the remaining vadas in batches.
