In a large mixing bowl, combine cassava flour, cumin seeds, coriander powder, turmeric powder, and salt. Mix well to distribute the spices evenly throughout the flour.
Add the finely chopped spinach, grated carrot, and green chili (if using) to the flour mixture.
Slowly add water to the mixture, mixing continuously with your hands to form a dough. You may not need all the water or you may need a little more, depending on the texture. The dough should be soft and pliable, but not sticky.
Once the dough comes together, add the melted coconut oil and knead the dough for about 5 minutes until it is smooth and elastic.
Divide the dough into 8 equal portions and roll each portion into a ball.
Lightly dust a clean surface with a bit of cassava flour. Roll each dough ball into a flat, round disc, about 6 inches in diameter. Use a rolling pin for uniform thickness.
Heat a non-stick skillet or tava over medium heat. Once hot, place one rolled-out paratha onto the skillet.
Cook for about 2-3 minutes on one side until you see bubbles starting to form and the edges begin to turn golden brown.
Flip the paratha and cook for another 2 minutes until both sides are cooked through and have golden-brown spots.
Remove the paratha from the skillet and keep it warm under a kitchen towel. Repeat with the remaining dough.
