Ingredients

  • 2 medium-sized ripe tomatoes
  • 2 cloves of garlic
  • 2 large potatoes
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 5 leaves fresh basil leaves (optional)

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Wash and slice the potatoes into 1/4 inch thick rounds. Pat them dry with a paper towel.

Step 3

Arrange the potato slices on a baking sheet lined with parchment paper. Brush both sides with 1 tablespoon of olive oil and season with 1/2 teaspoon of sea salt and 1/4 teaspoon of black pepper.
