Ingredients

  • 2 pieces beef rump steaks
  • 3 tablespoons ghee
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh parsley
  • 2 cloves garlic
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil

Directions

Step 1

Remove the beef rump steaks from the refrigerator and allow them to come to room temperature for about 15 minutes.

Step 2

In a small bowl, finely chop the rosemary, thyme, and parsley. Mince the garlic cloves and add them to the herb mixture.

Step 3

Add 2 tablespoons of ghee to the herb and garlic mixture, then add the lemon juice, sea salt, and black pepper. Mix thoroughly to combine and set aside.

Step 4

Pat the beef rump steaks dry with paper towels and season them with a pinch of sea salt and black pepper on both sides.

Step 5

Heat the olive oil and 1 tablespoon of ghee in a heavy skillet over medium-high heat until the ghee is hot and shimmering.

Step 6

Place the steaks in the skillet and sear for about 3-4 minutes on each side for medium-rare, or longer for your desired level of doneness.

Step 7

Once the steaks are cooked, remove them from the skillet and let them rest on a cutting board for about 5 minutes.

Step 8

While the steaks are resting, prepare the herb butter by placing a dollop of the herb and ghee mixture on top of each steak, allowing it to melt into the meat.

Step 9

Serve immediately with your favorite Whole30-compliant side dishes.
