Ingredients

  • 3 large Ripe bananas
  • 3 large Eggs
  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut oil, melted
  • 0.5 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with a little coconut oil or line it with parchment paper.

Step 2

In a large mixing bowl, mash the ripe bananas with a fork until they're mostly smooth.

Step 3

Add the eggs and vanilla extract to the mashed bananas and whisk until well combined.

Step 4

Stir in the melted coconut oil, making sure it is fully incorporated with the wet mixture.

Step 5

In another bowl, whisk together the almond flour, coconut flour, baking soda, ground cinnamon, and salt.

Step 6

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. If using, fold in chopped nuts at this stage.
