Ingredients

  • 4 large eggs
  • 1 tablespoon olive oil
  • 0.5 medium, diced white onion
  • 1 medium, diced tomato
  • 0.5 medium, diced green bell pepper
  • 2 tablespoons, chopped fresh cilantro
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper

Directions

Step 1

In a medium-sized bowl, crack the eggs and whisk them well until the yolks and whites are fully combined. Set aside.

Step 2

Heat the olive oil in a non-stick skillet over medium heat.

Step 3

Add the diced onion to the skillet and sauté for about 2 minutes, stirring occasionally, until the onion begins to soften.

Step 4

Stir in the diced tomato and green bell pepper, and continue to cook for another 2 minutes until the vegetables are slightly tender but still bright in color.

Step 5

Lower the heat to medium-low and pour the whisked eggs into the skillet with the vegetables.

Step 6

Allow the eggs to cook undisturbed for about 30 seconds, to slightly set at the bottom.

Step 7

Using a spatula, gently stir the eggs from the edges to the center, incorporating the vegetables as you go. Continue this process until the eggs are fully cooked, creamy, and still slightly shiny, which should take about 3-4 minutes.

Step 8

Add sea salt and freshly ground black pepper to taste, stirring gently to combine.

Step 9

Remove the skillet from the heat and fold in the chopped fresh cilantro.

Step 10

Serve immediately, garnished with a few extra cilantro leaves if desired.
