Ingredients

  • 4 pounds whole chicken
  • 3 tablespoons olive oil
  • 1 whole lemon
  • 4 whole garlic cloves
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 medium onion

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Remove the giblets from the chicken, if included, and pat the chicken dry with paper towels.

Step 3

Place the chicken on a rack in a roasting pan or onto a lined baking dish.

Step 4

Cut the lemon in half and squeeze the juice of one half over the top of the chicken. Place the other half inside the cavity.

Peel and crush the garlic cloves and place them inside the cavity along with the rosemary and thyme sprigs.
