Ingredients

  • 1 large Sweet Potato
  • 2 tablespoons Olive Oil

  • 0.25 teaspoon Black Pepper
  • 4 slices Whole30-compliant Ham
  • 1 cup Raw Cashews
  • 3 tablespoons Nutritional Yeast
  • 2 tablespoons Lemon Juice
  • 0.5 teaspoon Garlic Powder
  • 0.5 teaspoon Onion Powder
  • 0.5 cup Water
  • 2 tablespoons Chopped Chives

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the sweet potato lengthwise into 1/4-inch thick slices. You should get about 4 slices from a large sweet potato.

Step 3

Place the sweet potato slices on a baking sheet and brush with olive oil on both sides. Sprinkle with salt and black pepper.

Roast in the oven for 20-25 minutes or until the slices are tender and slightly crisp at the edges. Flip halfway through the cooking time for even roasting.
