  • 0.25 cup flaxseeds
  • 0.25 cup chia seeds
  • 1 large egg
  • 1 large avocado
  • 0.5 whole lemon
  • 1 cup cherry tomatoes
  • 2 tablespoons fresh cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, combine the sunflower seeds, pumpkin seeds, flaxseeds, and chia seeds. Pulse until the mixture is finely ground.

Step 3

Transfer the seed mixture to a bowl and crack in the egg. Stir until it forms a thick, moldable dough.

Step 4

Spread the dough out onto the parchment-lined baking sheet, forming a rectangle about 1/2-inch thick.

Step 5

Bake in the preheated oven for 20 minutes or until the edges are golden and the center is firm.

Step 6

While the seed toast is baking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

Step 7

Mash the avocado with a fork and squeeze in the juice from the half lemon. Add salt and pepper to taste.

Step 8

Slice the cherry tomatoes in half and rough chop the cilantro.

Step 9

Once the seed toast is done, remove it from the oven and let it cool slightly.

Step 10

Top with cherry tomato halves and sprinkle with chopped cilantro.
