Ingredients

  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 cup raw pecans
  • 1 cup raw cashews
  • 0.5 cup unsweetened coconut flakes
  • 0.5 cup pistachios
  • 0.5 cup pumpkin seeds (pepitas)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.25 cup coconut oil
  • 0.5 teaspoon salt
  • 1 large egg white

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

Step 2

In a large bowl, combine the almonds, walnuts, pecans, cashews, coconut flakes, pistachios, and pumpkin seeds.

Step 3

Add the ground cinnamon and salt to the nut mixture, tossing until well combined.

Step 4

In a small saucepan, melt the coconut oil over low heat until liquid.

Remove the saucepan from heat and stir in the vanilla extract.

In a separate small bowl, whisk the egg white until frothy.
