Ingredients

  • 4 medium sweet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup coconut cream
  • 1 jalapeño, diced
  • 2 tablespoons tomato paste
  • 1 tablespoon lime juice
  • 0.25 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 2 green onions, sliced

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Peel and cut the sweet potatoes into thin fries, about 1/4 inch thick.

Step 3

In a large bowl, toss the sweet potatoes with olive oil, chili powder, garlic powder, paprika, sea salt, and ground black pepper until evenly coated.

Step 4

Spread the sweet potatoes on a baking sheet in a single layer, making sure they are not overcrowded. Use two sheets if necessary.

Step 5

Bake in the preheated oven for 30-35 minutes, flipping halfway through, until the fries are crispy and golden brown.

Step 6

While the fries are baking, prepare the sauce by combining coconut cream, diced jalapeño, tomato paste, and lime juice in a small bowl. Stir until smooth and well mixed.

Step 7

Once the fries are cooked, remove them from the oven and immediately drizzle with the prepared sauce.

Step 8

Garnish with chopped cilantro, sliced avocado, and sliced green onions.

Step 9

Serve hot and enjoy your Whole30 Nacho Fries!
