Ingredients

  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 cup cassava flour
  • 0.5 cup almond flour
  • 0.25 cup chopped fresh cilantro
  • 2 tablespoons lemon juice
  • 1 teaspoon ginger paste
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil
  • 0.5 teaspoon baking soda

Directions

Step 1

In a large mixing bowl, combine grated zucchini and carrot. Squeeze out excess water to ensure the mixture isn't too wet.

Step 2

Add cassava flour, almond flour, and cilantro to the grated vegetables. Mix well.

Step 3

Stir in lemon juice, ginger paste, turmeric powder, cumin seeds, cayenne pepper, and salt. Mix until all ingredients are well combined.

Step 4

Add olive oil to the mixture and mix thoroughly to form a dough-like texture.

Step 5

Sprinkle the baking soda over the mixture and allow it to react with the lemon juice for a minute, creating a slight froth.

Step 6

Divide the mixture into small portions and shape them into logs or dumplings.

Step 7

Prepare a steamer and bring water to a boil. Once boiling, place muthiya logs or dumplings onto the greased steamer tray.

Step 8

Cover and steam for about 25 to 30 minutes, or until a knife inserted into the muthiya comes out clean.

Step 9

Allow them to cool slightly before slicing into rounds. Serve warm or at room temperature, optionally garnished with additional cilantro.
