Ingredients

  • 1 large yellow onion
  • 4 garlic cloves
  • 3 medium carrots
  • 3 celery stalks
  • 2 medium zucchini
  • 1 large red bell pepper
  • 2 medium sweet potatoes
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 2 cups baby spinach
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Dice the onion, mince the garlic, and add them to the pot. Sauté for 5 minutes until the onion is translucent.

Slice the carrots and celery, chop the zucchini, seed and dice the bell pepper, and peel and cube the sweet potatoes.
