Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon yellow mustard
  • 0.25 cup coconut aminos
  • 0.25 cup apple cider vinegar
  • 1 cup beef broth
  • 6 whole pepperoncini peppers
  • 2 tablespoons ghee

Directions

Step 1

Pat the beef chuck roast dry with paper towels. Season generously with salt, black pepper, onion powder, garlic powder, and smoked paprika.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the roast for about 3-4 minutes on each side until browned.

Transfer the seared roast to a slow cooker.
