Ingredients

  • 1 cup Almond flour
  • 0.25 cup Arrowroot flour
  • 2 tablespoons Coconut flour
  • 0.25 teaspoon Baking soda
  • 2 teaspoons Ground cinnamon
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Coconut milk
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Date syrup (optional, for dipping)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together almond flour, arrowroot flour, coconut flour, baking soda, 1 teaspoon of ground cinnamon, and salt.

Step 3

In a separate bowl, beat the eggs and then mix in coconut milk, melted coconut oil, and vanilla extract.

Step 4

Pour the wet ingredients into the dry ingredients and stir until well combined and a dough forms.

Scoop the dough into a piping bag fitted with a star tip.

Pipe 2-3 inch mini churros onto the prepared baking sheet, leaving space between each.
