Ingredients

  • 500 grams ground beef
  • 2 tablespoons coconut oil
  • 1 medium, diced onion
  • 1 medium, sliced bell pepper
  • 1 medium, julienned carrot
  • 1 medium, sliced zucchini
  • 3 minced garlic cloves
  • 1 inch piece, grated ginger
  • 0.25 cup coconut aminos
  • 1 tablespoon lime juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 sliced green onions
  • 2 tablespoons, chopped fresh cilantro

Directions

Step 1

Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

Step 2

Add the ground beef to the skillet, breaking it up with a wooden spoon as it cooks. Cook until it is browned and cooked through, about 5-7 minutes. Remove the beef from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of coconut oil. Add the onion, bell pepper, carrot, and zucchini. Sauté for about 3-4 minutes or until the vegetables are tender-crisp.

Step 4

Add the minced garlic and grated ginger to the skillet, sautéing for an additional minute until fragrant.

Step 5

Return the cooked ground beef to the skillet. Stir in the coconut aminos, lime juice, salt, and black pepper. Mix well to combine all the ingredients.

Step 6

Cook everything together for another 2-3 minutes until the flavors meld together and are heated through.

Step 7

Remove from heat and garnish with sliced green onions and fresh chopped cilantro.

Step 8

Serve the stir-fry hot, and enjoy!
