  • 500 grams ground beef or turkey
  • 400 grams canned diced tomatoes
  • 250 milliliters coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoons turmeric powder
  • 0.5 teaspoons cayenne pepper
  • 1 teaspoon sea salt
  • 0.5 teaspoons black pepper
  • 100 grams baby spinach
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and grated ginger and cook for another minute.

Step 4

Increase the heat to medium-high and add the ground meat. Cook, breaking it up with a wooden spoon, until browned, about 7-8 minutes.
