Ingredients

  • 8 large leaves Butter lettuce leaves
  • 2 pieces Cooked chicken breast
  • 1 medium Cucumber
  • 1 large Tomato
  • 0.25 medium Red onion
  • 0.5 cup Kalamata olives
  • 2 tablespoons Extra virgin olive oil
  • 1 medium Lemon
  • 0.25 cup Fresh parsley
  • 2 cloves Garlic cloves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by washing the butter lettuce leaves gently under cold water. Pat them dry with a paper towel and set aside.

Step 2

Take the cooked chicken breasts and slice them into thin, bite-sized strips. Alternatively, you may shred the chicken if preferred.

Step 3

Peel the cucumber and cut it into small dices. Similarly, dice the tomato into small pieces. Place both in a mixing bowl.
