Ingredients

  • 1 cup Farro
  • 3 cups Water
  • 1 teaspoon Kosher salt
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 small Red onion
  • 0.5 cup Kalamata olives, pitted
  • 0.25 cup Fresh parsley
  • 3 tablespoons Extra-virgin olive oil
  • 1.5 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Freshly ground black pepper

Directions

Step 1

Rinse the farro under cold water and then add it to a pot with the water and kosher salt.

Bring to a boil over high heat, then reduce the heat to low and let it simmer for about 30 minutes, or until the farro is tender and chewy.
