Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 2 tablespoons olive oil
  • 4 cloves garlic cloves
  • 14 ounces canned coconut milk
  • 0.5 cup chicken broth
  • 2 tablespoons nutritional yeast
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 0.5 cup sun-dried tomatoes
  • 0.25 cup fresh basil

Directions

Step 1

Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Step 3

Add the chicken breasts to the skillet and cook for about 5-7 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.

Step 4

In the same skillet, add minced garlic cloves and sauté for about 1 minute until fragrant.

Step 5

Reduce the heat to medium and add the coconut milk, chicken broth, nutritional yeast, oregano, and red pepper flakes. Stir well to combine.

Step 6

Add the sun-dried tomatoes to the sauce and simmer for 5 minutes, stirring occasionally.

Step 7

Return the chicken to the skillet, spooning the sauce over the chicken to coat.

Step 8

Simmer the chicken in the sauce for another 5-7 minutes to allow the flavors to meld and the chicken to heat through.

Step 9

Garnish with fresh basil before serving. Serve immediately with your choice of vegetables or cauliflower rice to keep it Whole30 compliant.
