  • 4 cups cauliflower rice
  • 1 cup coconut milk (full-fat, unsweetened)
  • 2 large fresh mangoes, sliced
  • 2 tablespoons coconut aminos
  • 1 tablespoon lime juice
  • 2 tablespoons unsweetened shredded coconut
  • 0.5 teaspoon sea salt
  • 1 tablespoon pepitas (pumpkin seeds), toasted

Directions

Step 1

Begin by preparing the mangoes. Peel and slice the mangoes into thin strips. Set aside.

Step 2

In a medium saucepan, combine the cauliflower rice and coconut milk. Stir well to ensure the cauliflower rice is thoroughly coated.

Place the saucepan over medium heat. Cook the cauliflower rice mixture for about 10-12 minutes, stirring occasionally, until the rice has absorbed most of the coconut milk and has softened to your liking.
