  • 1 cup small tapioca pearls
  • 4 cups water
  • 1 cup coconut milk
  • 2 large ripe mangoes, peeled and cubed
  • 1 cup unsweetened almond milk
  • 1 teaspoon vanilla extract (optional)
  • 1 pinch sea salt

Directions

Step 1

In a medium pot, bring 4 cups of water to a boil over high heat. Once boiling, add 1 cup of small tapioca pearls and reduce the heat to medium-low, allowing it to simmer.

Cook the tapioca pearls for about 10 minutes, stirring occasionally to prevent them from sticking together, until they become translucent with a slight white center.
