Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 3 Cloves of garlic, minced
  • 1 medium Yellow onion, finely chopped
  • 28 ounces Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Red pepper flakes
  • 0 to taste Fresh basil leaves, for garnish

Directions

Step 1

Using a spiralizer, create zucchini noodles from the four medium zucchinis and set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and chopped onion to the skillet and sauté for about 3-4 minutes until the onions become translucent.

Step 4

Stir in the crushed tomatoes, tomato paste, balsamic vinegar, dried basil, dried oregano, salt, black pepper, and red pepper flakes.

Step 5

Lower the heat to a simmer, and allow the sauce to cook for 15 minutes, stirring occasionally.

Step 6

While the sauce simmers, in a separate pan, lightly sauté the zucchini noodles in a bit of olive oil for 2-3 minutes until slightly tender, but still crunchy.

Step 7

Once the sauce is ready, taste and adjust seasoning if needed.

Step 8

Serve the zucchini noodles topped with the tomato sauce and garnish with fresh basil leaves.
