  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 pounds boneless, skinless chicken breasts
  • 2 bay leaves
  • 1 teaspoon fresh thyme
  • 0.5 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add chopped onion, diced carrots, and diced celery to the pot. Sauté for about 5 minutes, stirring occasionally, until the vegetables start to soften.

Add minced garlic and sauté for another minute until fragrant.
