  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Sea salt
  • 1 cup Dates, pitted
  • 0.25 cup Water, hot
  • 3 large Eggs
  • 1 tablespoon Lemon zest
  • 0.25 cup Lemon juice, freshly squeezed
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Poppy seeds (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper, allowing some paper to hang over the edges for easy removal.

In a small bowl, cover the pitted dates with hot water and let them soak for about 5 minutes to soften.

In a large mixing bowl, combine almond flour, coconut flour, baking soda, and sea salt. Stir well to ensure it's evenly mixed.
