  • 3 garlic cloves, minced
  • 28 ounces diced tomatoes (no salt added)
  • 2 tablespoons tomato paste
  • 1 cup beef broth (Whole30 compliant)
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 bay leaves
  • 0.25 cup fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the lean ground beef and cook until browned, stirring occasionally to break up the meat. Remove the cooked beef from the pot and set aside.

Step 2

In the same pot, add the remaining 1 tablespoon of olive oil. Add the diced onion and cook for 5 minutes until slightly softened.
