Ingredients

  • 1 cup brown rice
  • 4 cups water
  • 1 whole vanilla bean
  • 1 pinch sea salt

Directions

Step 1

Rinse the brown rice under cold water until the water runs clear to remove excess starch.

Step 2

In a large pot, combine the rinsed brown rice and 2 cups of water. Bring it to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 45 minutes until the rice is tender.

Step 3

Allow the rice to cool slightly. Once cooled, transfer the cooked rice to a blender.

Step 4

Add the remaining 2 cups of water to the blender with the rice.

Step 5

Split the vanilla bean lengthwise and scrape the seeds into the blender. Discard the pod or save it for another use.

Step 6

Add a pinch of sea salt to the blender and blend on high speed for 2-3 minutes until the mixture is smooth and creamy.

Step 7

Strain the mixture through a fine-mesh sieve or nut milk bag into a large bowl to remove the rice pulp. Use a spoon or spatula to press as much liquid through as possible.
