Ingredients

  • 2 cups Almond flour
  • 1 cup Tapioca flour
  • 3 large Eggs
  • 0.25 cup Water
  • 1 pound Ground beef
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 0.5 cup, chopped Fresh cilantro
  • 1 teaspoon Cumin
  • 0.5 teaspoon Coriander
  • 0.25 teaspoon Crushed red pepper flakes
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Ghee

Directions

Step 1

In a large mixing bowl, combine almond flour and tapioca flour.

Step 2

Add the eggs and water to the flour mixture and stir until it forms a cohesive dough. Knead the dough gently until it becomes smooth. Cover and set aside to rest for 15 minutes.

Step 3

In a skillet over medium heat, add ghee and sauté the diced onion and minced garlic until they are translucent and fragrant, about 3-5 minutes.

Step 4

In a separate bowl, combine ground beef with sautéed onion and garlic, chopped cilantro, cumin, coriander, crushed red pepper flakes, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Step 5

Divide the dough into 12 equal portions. Roll each portion into a ball and then flatten into a round disc with a rolling pin, about 4 inches in diameter.

Step 6

Place a heaping tablespoon of beef mixture onto the center of each dough disc. Carefully gather the edges of the dough around the filling, pleating as you go, and twist the top to seal the dumpling.

Step 7

Bring a large pot of salted water to a boil. Gently place the khinkali into the water, being careful not to overcrowd the pot. Cook in batches if necessary.

Step 8

Boil the khinkali for about 8-10 minutes, or until they float to the top and the dough is cooked through.

Step 9

Remove the khinkali with a slotted spoon and drain well. Serve hot.
