Ingredients

  • 2 pounds Ground beef
  • 2 large Eggs
  • 0.5 cup Almond flour
  • 1 medium Onion
  • 3 large Garlic cloves
  • 2 tablespoons Coconut aminos
  • 3 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Finely chop the onion and mince the garlic cloves.

Step 3

In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 5 minutes. Remove from heat and let them cool slightly.

Step 4

In a large mixing bowl, combine the ground beef, eggs, almond flour, coconut aminos, tomato paste, dried oregano, dried basil, salt, and black pepper.

Step 5

Add the cooled onion and garlic mixture to the bowl with the other ingredients.

Step 6

Using your hands or a large spoon, mix all the ingredients together until fully combined. Be careful not to overmix, as this can make the meatloaf dense.

Step 7

Transfer the meat mixture into a loaf pan or shape it into a loaf on a lined baking sheet.

Step 8

Place the meatloaf in the preheated oven and bake for 50 to 60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 9

Let the meatloaf rest for about 10 minutes before slicing. This helps retain its juices.

Step 10

Serve slices of meatloaf hot with your favorite keto-friendly or Whole30 approved sides.
