Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 large red bell pepper, diced
  • 1 large yellow bell pepper, diced
  • 3 medium carrots, sliced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Add the beef cubes in batches and brown them on all sides. Remove and set aside.

In the same pot, add onions and sauté until soft and translucent, about 5 minutes.
