Ingredients

  • 3 tablespoons Dijon mustard
  • 3 tablespoons Lemon juice
  • 2 tablespoons Apple cider vinegar
  • 0.5 cup Extra virgin olive oil
  • 2 large, pitted Dates
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by soaking the pitted dates in warm water for about 5 minutes to soften them. This will make it easier to blend them smoothly into the dressing.

Step 2

After the dates have soaked, drain and discard the water. Place the softened dates into a blender or food processor.

Step 3

Add the Dijon mustard, lemon juice, apple cider vinegar, and garlic clove to the blender.

Step 4

Blend on high speed until the mixture is smooth and the dates are fully incorporated.

Step 5

With the blender running on low speed, slowly drizzle in the extra virgin olive oil. This should create a creamy emulsion as the dressing starts to thicken.

Step 6

Once the oil is fully incorporated, add the salt and black pepper to the blender. Blend again for a few seconds to combine.

Step 7

Taste your dressing and adjust the seasoning as needed with more salt or lemon juice for brightness.

Step 8

Transfer the dressing to a jar or airtight container. It can be stored in the refrigerator for up to one week. Shake well before each use as some separation may occur.
