Ingredients

  • 2 cups fresh strawberries
  • 2 cups water
  • 2 tablespoons grass-fed gelatin
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Directions

Step 1

Wash and hull the strawberries. Slice them into halves or quarters so they blend more easily.

Step 2

In a blender, combine the strawberries with one cup of water and blend until smooth. If you prefer a smoother jello, strain the puree through a fine mesh sieve to remove seeds.

Step 3

In a medium saucepan, add the remaining cup of water and sprinkle the gelatin over it. Allow the gelatin to bloom for about 5 minutes until it becomes a thick gel.

Step 4

Place the saucepan over medium heat and stir constantly for about 2-3 minutes until the gelatin completely dissolves. Do not let the mixture boil.

Step 5

Remove from heat and stir in the strawberry puree, lemon juice, and vanilla extract. Mix well until all ingredients are thoroughly combined.

Step 6

Pour the mixture into a glass dish or individual serving cups. Let it cool slightly before transferring to the refrigerator.
