Ingredients

  • 1 large Cauliflower head
  • 1 large Egg
  • 0.5 cup Almond flour
  • 0.25 cup Nutritional yeast
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.75 cup Tomato sauce (no added sugar)
  • 0.5 cup Fresh pineapple
  • 0.25 cup Onion
  • 0.25 cup Bell pepper
  • 0.5 cup Cooked chicken breast
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Break the cauliflower into florets and pulse in a food processor until it reaches a rice-like texture.

Steam the cauliflower rice for about 4-5 minutes until slightly tender. Then place it inside a clean kitchen towel and squeeze out as much liquid as possible.
