Ingredients

  • 2 cups fresh or frozen lingonberries
  • 0.5 cup water
  • 0.25 cup freshly squeezed orange juice
  • 1 teaspoon zest of an orange
  • 4 pieces pitted dates, chopped
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon sea salt

Directions

Step 1

In a medium saucepan, combine the lingonberries and water. Bring to a simmer over medium heat.

Step 2

Add the chopped pitted dates to the saucepan and stir to combine.

Step 3

Cook the mixture, stirring occasionally, until the berries start to burst and the dates soften, about 10 minutes.

Step 4

Add the freshly squeezed orange juice, orange zest, ground cinnamon, and sea salt to the saucepan. Stir well to incorporate.

Step 5

Continue to cook for an additional 5 minutes, until the sauce thickens slightly. You can mash some of the berries with the back of a spoon for a smoother consistency.

Step 6

Taste the sauce and adjust the seasoning if necessary.

Step 7

Remove from heat and allow the lingonberry sauce to cool slightly. It will thicken more as it cools.

Step 8

Transfer the sauce to a jar or container and chill in the refrigerator before serving. This sauce can be stored for up to one week.
