Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw walnuts
  • 1 cup Raw cashews
  • 0.5 cup Pumpkin seeds (pepitas)
  • 0.5 cup Sunflower seeds
  • 1 cup Unsweetened shredded coconut
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 cup Raw sunflower seed butter or almond butter
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Dried unsweetened cranberries
  • 0.5 cup Dried unsweetened apricots, chopped

Directions

Step 1

Preheat your oven to 325°F (163°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almonds, walnuts, cashews, pumpkin seeds, sunflower seeds, and shredded coconut. Stir in the cinnamon and nutmeg until evenly coated.

Step 3

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from heat and stir in the sunflower seed butter and vanilla extract until smooth.

Pour the wet mixture over the dry ingredients and mix thoroughly until all the nuts and seeds are well coated.
