Ingredients

  • 1 large yellow onion, chopped
  • 2 medium bell peppers, chopped
  • 4 garlic cloves, minced
  • 2 pounds ground beef, preferably grass-fed
  • 28 ounces diced tomatoes, no salt added
  • 3 tablespoons tomato paste
  • 1.5 cups beef stock
  • 3 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium zucchini, chopped
  • 2 medium carrot, peeled and chopped
  • 0.25 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add chopped onions and bell peppers to the pot, cooking until softened, about 5 minutes.

Stir in the minced garlic and cook until fragrant, about 1 minute.

Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until the beef is browned and cooked through, about 8-10 minutes.
