Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breasts, boneless and skinless
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 6 cups chicken broth (Whole30 compliant)
  • 1 medium zucchini, diced
  • 2 medium tomatoes, diced
  • 2 cups baby spinach
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the chicken breasts to the pot and cook for about 5-7 minutes on each side until thoroughly cooked. Remove them from the pot and set aside.
