  • 1 tablespoon ginger, grated
  • 1 medium red bell pepper, sliced
  • 8 ounces cremini mushrooms, sliced
  • 2 medium carrots, julienned
  • 4 cups beef bone broth
  • 3 tablespoons coconut aminos
  • 1 tablespoon fish sauce
  • 2 large zucchini, spiralized into noodles
  • 2 cups spinach
  • 2 stalks green onions, sliced
  • 0.25 cup fresh cilantro, chopped
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the sliced beef and season with salt and black pepper. Cook until browned on all sides, about 3-5 minutes. Remove the beef from the pot and set aside.

Step 2

In the same pot, add the remaining 1 tablespoon of olive oil. Sauté the onion, garlic, and ginger until fragrant, about 2 minutes.

Add the red bell pepper, mushrooms, and carrots, and sauté for another 3-4 minutes until softened.
