Ingredients

  • 3 large red bell peppers
  • 1 medium eggplant
  • 3 garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 0.5 teaspoon chili flakes (optional)

Directions

Step 1

Preheat your oven to 450°F (232°C).

Step 2

Wash and dry the red bell peppers and eggplant. Cut the red peppers in half and remove the seeds. Slice the eggplant into 1-inch thick rounds.

Place the peppers (cut side down) and eggplant on a baking sheet. Roast in the preheated oven for 25-30 minutes or until the peppers have blistered and the eggplant is tender.

While the vegetables are roasting, peel the garlic cloves.
