Ingredients

  • 4 pieces Chicken breasts, boneless and skinless
  • 0.25 cup Extra-virgin olive oil
  • 3 tablespoons Lemon juice, freshly squeezed
  • 4 cloves Garlic, minced
  • 2 tablespoons Fresh rosemary, chopped
  • 2 tablespoons Fresh thyme, chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, rosemary, thyme, parsley, salt, pepper, and red pepper flakes (if using) to create the marinade.

Step 2

Place the chicken breasts in a shallow dish or a resealable plastic bag and pour the marinade over the chicken.

Step 3

Ensure all chicken pieces are well-coated, then cover the dish or seal the bag and refrigerate for at least 30 minutes or up to overnight for more flavor.

Step 4

Preheat the grill to medium-high heat. If using a charcoal grill, make sure the coals are ashed over and have settled into an even layer.

Step 5

Remove the chicken breasts from the marinade, allowing excess marinade to drip off, and discard the leftover marinade.

Step 6

Place the chicken on the grill and cook for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the meat is no longer pink in the center.

Step 7

Once cooked, remove the chicken from the grill and let it rest for about 5 minutes to allow the juices to redistribute.

Step 8

Slice the chicken and serve immediately with your favorite Whole30 compliant side dishes.
