  • 2 pounds Yukon Gold potatoes

  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Almond milk

Directions

Step 1

Peel and cut the Yukon Gold potatoes into evenly-sized chunks, about 1.5 inches each, to ensure they cook evenly.

Place the potato chunks in a large pot and cover them with cold water by about an inch. Add a large pinch of salt to the water.

Bring to a boil over high heat, then reduce to a simmer. Cook until the potatoes are very tender, about 15-20 minutes.
