  • 3 minced garlic cloves
  • 2 large, chopped carrots
  • 2 chopped celery stalks
  • 2 medium, cubed sweet potatoes
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 5

Pour in the diced tomatoes and chicken broth, then stir in the fresh thyme, rosemary, bay leaf, salt, and black pepper.

Step 6

Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 30 minutes, or until the vegetables are tender.

Step 7

Remove the bay leaf from the stew before serving.

Step 8

Taste and adjust seasoning if necessary.

Step 9

Garnish with fresh parsley before serving hot.
